Jane Mara Block received her B.Sc. in Pharmacy and Biochemistry degree from Santa Catarina Federal University (Brazil) in 1988. She completed her Masters in Food Science in 1992 at the same university and her Doctorade degree at Campinas State University (Campinas, Brazil). Currently she is an Associate Professor at Santa Catarina Federal University. She has experience in Food Science with emphasis in fats and oils acting on the following topics: fats and oils oxidation, antioxidant activity of bioactive compounds of natural origin, formulation of zero-trans fats using neural networks and crystallization and performance of interesterified fats based on soybean oil. She has done her Pos-Doctorade at University of Guelph (September 2009 – November 2010). She was the President of the Brazilian fats and Oils Society in the bienniums 2004-2006 and 2006-2008.
